Easy Japanese Omurice (Omelet Rice) Recipe

The first time I ever had Japanese Omurice was at Kenka in NY’s St. Marks Place. For those who don’t know, St. Marks Place is a street famously known for their authentic Japanese eats. Kenka is one of the most fun restaurants you could ever go to. Japanese pornography lines the walls. People are doing sake bombs while downing Japanese street food left and right. And, you finish your meal with the cotton candy machine outside.

Omurice is basically “omelet rice”. It’s a soft scrambled egg in an even layer that tops rice. In this omurice recipe, I opted to make fried rice out of ingredients I had on hand. I had a can of vegetables I wanted to get rid of, so that was used. You can feel free to use frozen vegetables or even fresh ones. I’m also partial to spam, but you can swap it for leftover chicken, beef, or whatever your heart desires. Anything you choose is going to end up delicious, I’m sure.

Ingredients

1 can of spam
1 can of vegetables
2 cups of cooked rice
8 eggs
1/4 cup of ketchup
1 tbsp water
salt & pepper to taste
Ketchup & Kewpie Mayo to taste
Bonito flakes (optional)
Canola Oil

Steps

1. Open the can of spam and dice it into pieces the length of a centimeter each.

2. Add 3 tablespoons of canola oil to a deep pan and stir fry the spam over medium heat. When they turn golden, remove the spam to a dish.

3. Open your canned vegetables, drain, and add to the pan. Stir fry the vegetables for 3 minutes over medium-high heat.

4. Add the cooked rice to the stir fried vegetables and continue to stir fry for 3 minutes. If you’re using old rice, break it up before you add to the pan and stir fry for 5 minutes instead.

5. Return the spam to the pan and stir fry until everything is mixed well.

6. Mix the ketchup with the water in a separate bowl and pour over the fried rice.

7. Stir fry until every grain of rice is evenly coated with the ketchup mixture. Then, add salt and pepper to taste.

8. After everything’s incorporated, get a rice bowl and pack the fried rice into it.

9. Flip it upside down onto a plate and let it sit. (If you’re feeling lazy, you can skip these two steps and just scoop fried rice onto your plate.)

10. Rinse out and wipe down your pan.

11. Scramble two eggs at a time per serving.

12. Add 2 tbsp of canola oil to the pan. over medium high. Once the oil is hot, add your scrambled eggs.

13. Pull the egg in from the sides to the middle of the pan with your spatula until slightly underdone. Essentially you want an evenly cooked layer of egg.

14. Turn off the heat. The egg will continue to cook for a little in the pan.

15. Take the bowl off of your rice. It should be nicely formed now. Then, carefully lay the egg on top of the fried rice dome.

16. Drizzle ketchup and mayo over the egg. Add bonito flakes if you’d like.

17. Enjoy!

Tips

  • This omurice recipe is a great way to get rid of leftovers in the fridge! Swap the protein and veggies for anything you’d like.
  • Japanese sushi rice would be the best option since it’s stickier and will be easier to form inside the bowl. I used brown sushi rice here for a slightly healthier take.
  • People often recommend to use old rice from the fridge for fried rice recipes. I always forget to make more rice ahead of time, so my trick is to cook rice fresh but with less water.
